Hi Laura - a quick look at your blog and it seems you're quite a pressure cooking expert! Thanks for your insight. I guess I was staring at the nub because I didn't want anything to overcook if I didn't start my timer immediately. Which is probably not a huge deal with applesauce. I'm sure I'll be heading over to your blog as I do more and more with my Cooker!

Your pressure cooker should not take 20 minutes to reach pressure with just a couple of inches of water. It should take 10, maximum 12, minutes. As you fill it more, it will take more time to reach pressure.

Also, you don't need stare at the yellow nub the whole time while it is reaching pressure. You can go about the kitchen and check it once in a while., when the steam comes out of the valve you can hear it a bit.

Ciao,

Prag - Not sure I'll be commercializing the applesauce any time soon, but it's pretty easy to find the jars. Or just remind me to bring a few next time I'm down in NY.

Leslie - Maybe bubbie put an end to those flavor combinations by the time you were born!

Wendy and Lara - Thanks for dropping by and for the pressure cooker tips (and reassurance).

Just found your blog on tastespotting! I use my pressure cookers several times a week..it shouldn't take that long to come to pressure in my experience. Turn the heat up all the way to high till it hits pressure and it should happen in just a few minutes (depending on the size of your pressure cooker, how hot the ingredients were to start, etc). If you have an electric stove, you may have to pull the pot off the burner for a minute when it hits pressure (after you turn the heat down) so it doesn't go into over pressure.

(Randomly stopping by via TasteSpotting!) Pressure canners and cookers do indeed take a while to come up to pressure - it sounds like you did fine. :) Some things vary between models, but that's one thing that certainly doesn't!
