You make it basically the same, but with cooked beetroot instead of tomatoes. And instead of chopped egg, try topping it with goat cheese “ice cream” (goat cheese mixed with basil and a bit of olive oil then frozen in tablespoon servings)

And now I’m dying for a custard tart…
