Hi Zahavah! I found this blog in Foodista and followed it here. One of the things I love the most about visiting great blogs like yours is I get to not only see food I've never seen prepared before, but you get to read about how they taste. Love it..... & now I'm hungry .... again :) By the way you can add more Foodista widget to your future blogs so more people can view it. Cheers!

Desiree - Thanks for visiting from Foodista. Please let me know how this turns out for you!

Monica - I did a bit of research on olive oils that taste like olives and this came out on the top of the list. I took the plunge and bought it and have been loving and savoring it. Don't bother cooking with it -- save it for salads and dipping in bread. I have a few others to try and will post them soon (along with a discussion of whether cold pressed extra virgin _really_ needs to be kosher!). Looks like I'll need to come down to visit to make this salad for you. Up until this year, I made it with store-bought herbs because I too could not grow my own. I just got lucky with the afternoon sun in my place. And you always have a room in my home to visit! Lots of love!

Thank you, everyone, for your comments! This salad is incredibly refreshing with the addition of the herbs.
- Caroline - I'm not quite sure that this replaces ice cream, but, well, maybe...
- Cookin' Canuck - glad you enjoyed post and the pictures...the salad is surprisingly satisfying with the full flavors and the addition of the almonds
- Ry - I forgot about Munchkin, the biggest turtle of them all!
- Alisa - welcome to my blog, and, yes, we kinda think that turtle is absolutely a keeper!

Happy sunshine everyone...I'm off to Panama.... Z
